The horse "Champion" is a horse everyone receives during the Tutorial. It is tied to your account, just as the two horses you start with, in order to prevent you from selling all the horses you own by accident, so you'll always have at least them.
I doubt you'd get a new "Champion" in exchange. This horse is a horse with the genetic potential of the foundation horses, but it's already trained, castrated and has a Poseidon's Pack. It's the same scheme for everyone. Yes, due to its genetic potential (and therefore skills) it will not be the best horse in game, but it can still win a few competitions.
